<p>1 package puff pastry shells<br />
2 large eggs, lightly beaten<br />
1/2 cup heavy whipping cream<br />
1/4 cup shredded whole milk mozzarella cheese<br />
2 tablespoons freshly grated Parmesan cheese<br />
1 tablespoon butter<br />
1/4 cup finely chopped onion<br />
3/4 cup chopped mushrooms (baby portabella, or a combination of several)<br />
 1/2 teaspoon dry mustard<br />
1/2 teaspoon salt<br />
1/4 teaspoon ground black pepper</p>
<p>Bake puff pastry shells according to package directions. Set aside. Lower oven temperature to 375 degrees. Whisk together eggs, heavy cream and cheeses; set aside. In a small sauté pan over medium heat, melt butter, add onions and sauté until soft, about 6 minutes. Add mushrooms and cook an additional 5 minutes. Stir in mustard. Season to taste with salt and pepper. Remove from heat and let cool. Once cooled, stir the onions and mushrooms into the egg-cream mixture. Pour into a shallow casserole dish.</p>
<p>Bake 20 minutes until golden brown and cracked on top. Remove from oven and carefully spoon egg mixture into 4 puff pastry shells, using a spatula to smooth the tops. Place shells back into preheated oven and re-heat for 5 minutes. Serve hot. </p>

<p>Sprinkle bell pepper, chiles and chives onto bottom of baking dish. Top with 1½-cups cheese. Whisk eggs, sour cream and evaporated milk in a medium bowl. Pour over vegetables and cheese in baking dish. Sprinkle with cheese.</p>
<p>Bake for 35 to 45 minutes or until knife inserted near center comes out clean. Cool on wire rack for 5 minutes. Top with salsa, cilantro, and salt to taste.</p>

24 ounces cream cheese, softened<br />
1/4 cup whipping cream<br />
1/2 teaspoon salt<br />
1/2 teaspoon  Dijon style mustard<br />

1 1/2 cups fresh grated Swiss cheese (4 oz)<br />
1/4 cup fresh grated Parmesan cheese<br />
1/4 teaspoon paprika<br />
1/8 teaspoon cayenne (optional)<br />
1/4 cup chopped chives</p>
<p>Preheat the oven to 350 degrees.</p>
<p>Combine the bread crumbs and melted butter, and press on the bottom and sides of a buttered 9 inch spring form pan. Bake for 8-12 minutes, or until very lightly browned. Set aside to cool. Cook the spinach according to package directions; place in strainer and press out all the liquid. In a large bowl, beat together the cream cheese, cream, salt and mustard until smooth. Add the eggs, one at a time, and beat well after each addition. Add the spinach, grated cheeses, paprika, cayenne and scallions. Beat on low speed until well combined. Pour the mixture into the prepared crust and bake for approximately 1 hour and 5 minutes, or until the filling is set and browned. Cool for 15 minutes on a wire rack. </p>
