<p>Preheat oven to 375 degrees. In a large mixing bowl cream together butter, sugar, brown sugar and vanilla. Stir in eggs; beating well. In another bowl, combine flour, baking soda and salt. Gradually add flour mixture to butter mixture, stirring until thoroughly combined. Stir in chocolate chips and nuts. Drop by teaspoonfuls onto an ungreased baking sheet. Bake for 8 to 10 minutes. Cool slightly before removing from the baking sheet. </p>

<p>Preheat oven to 375 degrees. Line baking sheets with parchment paper or lightly grease. In a medium bowl, whisk together oats, flour, cinnamon, baking soda, and salt; set aside. In a large mixing bowl, cream together the butter, brown sugar and sugar with an electric mixer on medium speed until light and fluffy. Add egg and vanilla and beat until mixed well. Stir in oat/flour mixture until just combined. Do not over mix. Drop dough by heaping tablespoonfuls 2 inches apart onto prepared baking sheets and flatten mounds slightly with the bottom of a glass that has been dipped in sugar. Bake <em>cookies</em> in upper level of oven, switching position of sheets halfway through baking to ensure even browning, for about 10 to 12 minutes or until lightly browned. Transfer cookies to wire racks to cool. Makes 2 dozen cookies.</p>

<p>Preheat oven to 375 degrees. In the microwave or over a double boiler, melt unsweetened <em>chocolate</em> and butter together, stirring occasionally until smooth. Sift together flour, baking soda, baking powder, and salt; set aside.  In a medium bowl, beat sugar, eggs, and vanilla until light. Mix in the chocolate mixture until well blended. Stir in the sifted ingredients alternately with sour cream, then mix in <em>chocolate chips</em>. Drop by rounded tablespoonfuls onto ungreased cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Allow <em>cookies</em> to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.</p>

<p>Preheat the oven to 375 degrees and lightly grease cookie sheets. Cream together the butter, brown sugar and 3/4 cup sugar until light and fluffy. In a small bowl beat together the eggs and vanilla, then mix into the butter mixture. In a medium bowl whisk together the flour, two teaspoons cinnamon, baking soda, and salt. Blend the flour mixture into the butter mixture and stir in the oats. Drop by the teaspoonful onto the prepared sheets. In a small bowl mix together the two teaspoons sugar with the teaspoon cinnamon and sprinkle over the cookies. Bake for 7 to 10 minutes. Cool for 2 minutes on the cookie sheets, then remove to wire racks to finish cooling. Store in airtight containers or freeze. </p>

<p>Combine first 5 ingredients in a large bowl. Combine vanilla and next 3 ingredients; add to flour mixture, stirring until well-blended (dough will be dry).</p>
<p>Turn the dough out onto a lightly floured surface, and knead lightly 10 times. Shape dough into a 16-inch-long roll. Place roll on a baking sheet coated with cooking spray, and flatten roll to 1-inch thickness.</p>
<p>Bake at 350° for 30 minutes. Remove roll from baking sheet to a wire rack, and let cool 15 minutes. Cut roll diagonally into 30-1/2-inch slices, and place, cut sides down, on baking sheet. Reduce oven temperature to 325°, and bake 10 minutes. Turn cookies over, and bake an additional 10 minutes (cookies will be slightly soft in center but will harden as they cool). Remove from baking sheet; let cool completely on wire rack.</p>

<p>Beat together 1 egg and sugar with an electric mixer until thick and pale. Sift in flour and baking powder and add butter. Beat on low speed until mixture forms a dough. Chill, wrapped in plastic wrap, until firm, at least 1 hour.</p>
<p>Preheat oven to 350°F.</p>
<p>Lightly beat remaining egg. Roll level teaspoons of dough into balls and arrange 1 inch apart on ungreased baking sheets. Press thumb into center of each ball to flatten, leaving a depression, and brush lightly with egg. Sprinkle crushed sugar in centers and bake in batches in middle of oven until golden, 12 to 18 minutes. Transfer to racks to cool completely.</p>
