Yummy Egg and Cheese Toast

Ingredients:
1 can (10 3/4 ounces) condensed Cheddar cheese soup
1/3 cup milk
6 hard-cooked eggs
6 slices bread, toasted
1/3 cup bacon bits or chips
Instructions:
Place soup in pan. Add milk. Cook, stirring continuously until heated through. Remove eggshells. Thinly slice each egg. Place 2-3 slices on a piece of toast. Cover eggs and toast with soup and sprinkle bacon bits over top.
Wake Me Up Vanilla Oatmeal with a Cherry Twist

Ingredients:
1 3/4 cups water
1 cup Old Fashioned Oats, or Quick Cooking Oats
1/8 teaspoon salt
1/4 cup dried cherries
1/2 teaspoon vanilla extract
2 tablespoons cherry jam
1/4 cup 1 percent low-fat milk
Instructions:
Bring water, oats, salt and cherries to a boil. Reduce heat. Simmer until oats reach desired consistency. Remove from heat adding the vanilla extract and cherry jam. Add desired amount of milk. Serve warm.
Sunday Surprise Waffles

Ingredients:
2 1/2 cups whole wheat flour
1 cup all-purpose flour
1 tablespoon ground flax seeds
2 tablespoons baking powder
1 tablespoon cinnamon
1 teaspoon nutmeg
2 tablespoons sugar
4 eggs
2 teaspoons vanilla
3 1/2 cups milk
1/2 cup melted butter
1/2 cup unsweetened applesauce
Chopped pecans or walnuts
Instructions:
Place both flours into a large mixing bowl. Fold together. Add the flax seed and baking powder and blend. Stir in the cinnamon and nutmeg. Add the sugar and mix well. Be sure all the ingredients are incorporated together. In a separate bowl place the 4 eggs and slightly beat with a whisk. Add the vanilla and milk and stir. Pour in the melted butter. Add the applesauce and mix well. Pour the egg mixture into the flour mixture. Blend well so everything is moistened. Heat waffle iron. Pour the batter on the waffle iron and top with the nuts. Cook until brown.
Good Morning Darlin’ Potato Hash

Ingredients:
2 large Idaho potatoes
1 tablespoon extra-virgin olive oil
2 tablespoons butter
2 small, soft apples, chopped
1 small onion, chopped
Salt and pepper
Instructions:
Using a fork prick the potatoes several times. Microwave on high for 10 to 12 minutes. Cool potatoes and chop into small pieces. In a medium size skillet heat the olive oil and butter over medium heat until butter is melted. Add apples and onions. Cook approximately 5 minutes. Place potatoes in the skillet and season with salt and pepper to taste. Cook until the potatoes are browned to your preference.
Filled With Love Pancakes

Ingredients:
2 1/2 cups all-purpose flour
Salt to taste
Pepper to taste
2 cups milk
2 eggs
1/4 cup vegetable oil plus extra for skillet
Butter for skillets
8 eggs
4 crumbled cooked sausage patties
American cheese slices
Instructions:
Preheat skillet over medium temperature. Sift together flour and salt in a large mixing bowl. Stir together milk, eggs and oil in a separate bowl. Combine the ingredients of both bowls together. Place butter and oil in skillet using what you think is necessary for your style of cooking. Place 1/3 cup of pancake mixture in skillet using more or less for your desired size of pancake. Cook until bubbles appear on top. Turn over and finish cooking. After pancake is done place on an ovenproof plate in a low degree oven to keep warm. Put eggs in a bowl. Add salt and pepper to taste. Mix well. Place butter in skillet and preheat. Pour egg mixture into heated skillet. Place the crumbled sausage in with egg mixture. Scramble the egg mixture on low heat. Remove pancakes from oven. Place one pancake onto plate. Add slice of cheese, eggs and another pancake. Continue until all pancakes are used. Top with your favorite pancake topping.
French Toast Breakfast

Ingredients:
4 slices of bread
3 eggs
¼ C. milk
Dash of salt
2 Tbsp. butter or margarine
½ C. brown sugar
¼ C. water
Sliced fruit (optional)
Directions:
Melt butter in skillet. In a bowl, beat eggs, milk, and salt together. Dip bread into egg mixture and cook until light brown and egg is cooked. Bread should be slightly fluffy. Remove from pan. Add brown sugar to pan and stir until melted. Add water and stir. Place bread back in pan and turn to coat. Remove from pan. Serve with mom’s favorite fruit, sliced, as a garnish or side dish.
Homemade Breakfast Granola

Ingredients:
4 cups quick-cooking rolled oats
1 ½ cups whole-wheat flour
1 cup natural bran
¼ cup toasted wheat germ
¼ cup chopped almonds
¼ cup sesame seeds
¼ cup sunflower seeds
½ tsp salt
1 cup hot water
½ cup honey
1 tsp vanilla extract
1 cup sultanas
Method:
Preheat the oven to 325°F.
Mix the oats, bran, wheat germ, flour, nuts, sesame seeds, sunflower seeds and salt together until thoroughly combined.
In a separate little bowl, combine the water, honey and vanilla. Combine with the dry ingredients and mix well.
Grease two baking sheets and spread the mixture on the baking sheets, then squeeze together to make small clumps. Bake in the preheated oven for about 30 minutes or until the granola mix is nice and golden. You will have to stir occasionally. Add raisins, stir again and bake for an extra 5 minutes.
Let the granola mix cool and then fill it into airtight containers.
This is a delicious and healthy granola that can be enjoyed with fresh fruit and yoghurt for a healthy start of the day!
French Toast with Apple

Makes 6 toasts
Ingredients:
2 eggs, beaten
6 fl oz low fat milk
1 tsp cinnamon
2 tbsp white sugar
4 tbsp apple sauce
6 slices bread
Instructions:
Mix together the eggs, milk, cinnamon, sugar and apple sauce in a large bowl. Soak each slice of bread until thoroughly saturated. Then fry the slices of bread in a greased frying pan on both sides until starting to turn brown.
Serve immediately with maple syrup and enjoy!
Eggy Breakfast Wrap

Serves 4
Ingredients:
6 large free-range, organic eggs, boiled, peeled and cut into slices
4 tortilla wraps
2 tbsp tomato ketchup
2 large tomatoes, thinly sliced
4 large slices of cooked ham
Handful of arugula leaves
Salt and pepper to taste
Instructions:
Cover each tortilla with a bit of ketchup, top with a slice of ham, tomato slices and egg slices. Lastly, top with a few arugula leaves. Then roll up your wrap, cut into half and serve as a delicious breakfast/brunch wrap.
Crispy Breakfast Oats

Serves 4
Ingredients:
1 ½ cup quick cooking oats
½ cup all purpose flour
1 tsp baking powder
½ tsp cinnamon
½ tsp salt
¼ cup margarine
1 egg, beaten
½ cup brown sugar
Instructions:
Preheat oven to 350ºF. Grease 9x9inch baking dish.
In a mixing bowl, combine oats, baking powder, cinnamon, salt and flour. In a separate bowl, mix together brown sugar and margarine and cream, using an electric mixer. Add the egg and mix well. Stir the margarine/egg mixture into the oats. Pour the mixture into the greased baking dish and bake in the oven for about 30 minutes.
Enjoy this breakfast treat with fresh fruit.
